Baked Peaches

Peel and half fresh peaches or purchase tinned peach half's. ( 2 per person). In a bowl mix equal amounts of marmalade and apricot jam ( about 1 table spoon of each for 8 servings), add a table spoon of warm water to dilute slightly ( not to be to watery).

Coat peaches in the jam by immersing them and transfer to a Pyrex baking dish. Any remaining jam spoon over the peaches. Sprinkle lightly with golden raisins and almond and ginger cookie crumbs ( finely cut in an food processor).

Bake for 15 to 20 minutes in a preheated 375 F oven, or until bubbling, Serve on top a raspberry coullis with your favorite ice-cream or yoghurt topping.
